Almond Macaroon Cookies I made these Almond Macaroon Cookies for a client and initially they came out not that great. A little soggy and they stuck to the foil. I tweaked the recipe and they came out perfect. Crisp exterior, chewy, sticky center. Absolutely worth the 20 minutes they take to make!

You will Need
- 7 oz almond paste
- 1 cup desiccated coconut
- ¼ c. egg whites (about 2 egg’s worth)
- ⅔ c. granulated sugar
- pinch salt
Instructions
- Preheat oven to 350 F
- Grate the almond paste into mixer bowl. Add sugar and salt. Mix on high until crumbs form. Add coconut and eggs and brat again on high until a smooth paste forms.
- Spoon mix in 1-1/2 tsp rounds on pre-greased baking tray, 2″ apart. Makes about 22 cookies.
